  • 1¾ cups organic gluten-free flour
  • ⅓ cup granulated sugar (or ½ cup if you prefer a sweeter bread)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs
  • ½ cup unsalted melted butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup (optional, but adds great flavor)
  • ¼ cup yogurt (this helps keep the bread moist and dense)
  • 3 overripe bananas, mashed
  • 1 cup strawberries, chopped and prepared
  • Optional: ½ cup walnuts (for half the loaf if you have picky eaters!)

 Instructions to make Strawberry Banana Bread Recipe

  • Combine flour, sugar, baking soda, and salt.
  • If you have cinnamon on hand, add 1 teaspoon for an extra flavor boost.

  • Maple syrup (if using)
  • Yogurt (for that extra moisture and richness)
  • Place the chopped strawberries on a dark dish towel or paper towels.
  • Gently press another towel over them to absorb excess juice.
  • Mix the mashed bananas into the wet ingredients.
  • Gently fold the wet mixture into the dry ingredients, being careful not to overmix.
  • Fold in the strawberries gently to avoid crushing them.
  • Mix walnuts into half of the batter.
  • Pour the plain batter into one side of the loaf pan, then add the walnut batter on top, placing a few extra walnuts on that side to indicate which half contains nuts.
  • Preheat your oven to 350°F (175°C).
  • Pour the batter into a greased loaf pan.
  • Bake for 35 minutes and check for doneness. If it’s not quite ready, give it up to an hour depending on your oven.

When the bread is done, it should be golden on top, with the walnuts toasted and the loaf smelling incredible.

Once the bread has cooled a bit, slice it up and enjoy the delicious, moist texture with bursts of sweet strawberry flavor. It’s perfect fresh out of the oven, but if you have leftovers, this bread freezes beautifully.
