  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour  
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt  
  • 1/2 cup chopped pistachios

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Cream butter and sugar: In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Combine wet and dry ingredients: Gradually add dry ingredients to wet ingredients, mixing until just combined. Stir in mashed bananas and chopped pistachios.
  5. Bake: Pour batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool: Let the bread cool in the pan for a few minutes before transferring to a wire rack to cool completely.  

Tips:

  • For a richer flavor, toast the pistachios before adding them to the batter.
