Ingredients

Banana Mixture

  • 2 ripe bananas (7 oz – 200g), pureed with a fork

Dry Ingredients

  • 1 ½ cups (190g) flour
  • 1 tsp (3g) cinnamon
  • 1/4 tsp (2g) baking soda
  • 1 ½ tsp (6g) baking powder
  • 1/2 tsp (3g) salt

Wet Ingredients

  • 1 large egg
  • ⅓ cup (70g) brown sugar
  • ⅓ cup (70g) sugar
  • 3 tbsp (40g) vegetable oil
  • 3 tbsp (40g) melted butter
  • 1 tsp (5g) vanilla extract
  • 1/4 cup (60g) sour cream

Cream Cheese Mixture

  • 7 oz (200g) cream cheese
  • 2 tbsp (30g) sugar
  • 1 tbsp (10g) flour
  • ½ tsp (3g) vanilla extract
  • 1 egg

Instructions

Prepare the Dry Ingredients

  1. In a large bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt.

Prepare the Wet Ingredients

  1. In another bowl, whisk the egg, brown sugar, sugar, vegetable oil, and melted butter until well combined.
  2. Add the vanilla extract and sour cream, mixing thoroughly.
  3. Incorporate the banana puree into the wet mixture.

Combine Mixtures

  1. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Prepare the Cream Cheese Mixture

  1. In a separate bowl, beat the cream cheese, sugar, flour, vanilla extract, and egg until smooth.

Assemble the Bread

  1. Preheat your oven to 340ºF (170ºC). Grease and line an 8½ x 4½ inch (21 x 11cm) loaf pan with parchment paper.
  2. Pour about two-thirds of the banana batter into the prepared loaf pan.
  3. Spread the cream cheese mixture evenly over the banana batter.
  4. Cover with the remaining banana batter.
  5. Swirl the batter with a knife for a marbled effect.

Bake

  1. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean. If the bread browns too quickly, cover it with aluminum foil.

Cool

  1. Let the bread cool in the pan for 10-15 minutes.
  2. Transfer the bread to a cooling rack to cool completely.
