For the Crust

  • 1 1/2 cups chocolate cookie crumbs (you can use chocolate graham crackers or chocolate digestive biscuits)
  • 6 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar

For the Caramel Layer

  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cut into pieces
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Chocolate Ganache

  • 8 ounces semi-sweet chocolate, finely chopped
  • 1 cup heavy cream

For Assembly

  • 3-4 ripe bananas, sliced


  1. Preheat the oven to 350°F (180°C).
  2. In a medium bowl, combine the chocolate cookie crumbs, melted butter, and sugar for the crust. Press the mixture into the bottom and up the sides of a tart pan with a removable bottom.
  3. Bake the crust for 10 minutes, then let it cool completely.
  4. For the caramel layer, place the sugar in a medium saucepan over medium heat. Stir constantly with a heat-resistant spatula until the sugar melts and turns into a golden amber color.
  5. Add the butter to the melted sugar, stirring until the butter is completely melted and combined.
  6. Slowly pour in the heavy cream while stirring continuously. Be careful as the mixture will bubble up.
  7. Continue to cook and stir for another 2-3 minutes until the caramel is smooth and thickened.
  8. Remove the caramel from heat, stir in the vanilla extract and a pinch of salt. Allow it to cool slightly.
  9. Pour the caramel over the cooled crust and spread it evenly. Place the tart in the refrigerator to set while you prepare the chocolate ganache.
  10. For the chocolate ganache, place the chopped chocolate in a heatproof bowl. Heat the heavy cream in a saucepan until it just begins to boil. Pour the hot cream over the chocolate and let it sit for a minute. Stir until the chocolate is completely melted and the mixture is smooth.
  11. Pour the chocolate ganache over the caramel layer in the tart. Spread it evenly with a spatula.
  12. Arrange the banana slices on top of the chocolate ganache.
  13. Refrigerate the tart for at least 2-3 hours or until set.
  14. Before serving, you can garnish the tart with additional chocolate shavings or a drizzle of caramel.
