Ingredients of Chocolate Banana and Zucchini Bread

  • 1 cup buckwheat flour
  • 3 tablespoons cacao powder
  • 1/2 teaspoon baking soda
  • 2 large or 3 small overripe bananas, mashed
  • 1 small zucchini, grated
  • 2 tablespoons pure maple syrup
  • 2 tablespoons coconut oil, melted
  • 1/2 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 organic or free-range eggs
  • Pinch of sea salt

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C) and grease and flour a loaf pan.
  2. In a large bowl, combine the buckwheat flour, cacao powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, whisk together the mashed bananas, grated zucchini, maple syrup, melted coconut oil, vanilla extract, and eggs.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool completely before slicing and serving.
