Preheat Your Oven

To get started, preheat your oven to 180°C (350°F). Prepare a standard-sized loaf pan by lightly coating it with butter or cooking spray, then dust it with flour, tapping out any excess. Set the pan aside for later.

Brown the Butter

Now, let’s make the brown butter. This step is super easy and adds a rich, nutty flavor to the banana bread that takes it to the next level.

  1. In a small saucepan, melt 85 grams of unsalted butter over medium heat.
  2. Once melted, the butter will start to foam up. As it foams, the milk solids in the butter will begin to toast, giving off a nutty aroma.
  3. Stir occasionally and keep a close eye on it.
  4. As soon as the foam starts to dissipate, check for brown bits at the bottom of the pan.
  5. If you see them, turn off the heat and immediately transfer the butter to a small bowl.

This whole process takes about 2-3 minutes. While you could skip this step and use plain melted butter, the brown butter really makes a difference in the final product.

Ingredients for Brown Butter Banana Bread Recipe

Dry Ingredients

  • 250 grams of flour
  • 5 grams of baking soda
  • 3 grams of salt

Next, stir in 100 grams of chopped walnuts until they’re well-coated with flour. Set this Wet Ingredients mixture aside.

Wet Ingredients

In a small bowl, mash three extremely ripe bananas until they’re very smooth. When I say extremely ripe, I mean those bananas that are turning really brown almost to the point where you might question if they’re still good to eat. These are perfect for banana bread! If you’ve got bananas that have reached this stage, toss them in the freezer until you’re ready to bake.

To the mashed bananas, add:

  • 2 room temperature eggs
  • Your cooled brown butter
  • 150 grams of granulated sugar
  • 50 grams of plain yogurt
  • 1 teaspoon of vanilla extract

Whisk these together until everything is well combined.


Combine Wet and Dry Ingredients

Make a well in the center of your dry ingredients and pour in the wet mixture. Using a wooden spoon or rubber spatula, gently fold everything together until well combined. Be careful not to overmix, as this could develop too much gluten and make the bread tough. However, do ensure there are no pockets of dry flour remaining.

Bake the Banana Bread

Once your batter is ready, pour it into the prepared loaf pan and smooth out the top with an offset spatula. Move the pan to the oven and bake for about one hour, or until a toothpick inserted into the center comes out clean.

Cool and Serve

Let your banana bread cool in the pan for about five minutes before unmolding it. You can let it cool completely on a wire rack or serve it warm it’s delicious either way!
