Ingredients of Banana Caramel Tart

For the Tart Crust

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced

  • 1 large egg yolk
  • 2 tablespoons ice water

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • Pinch of salt

  • 3 ripe bananas, sliced

Instructions

Tart Crust

  1. In a food processor, combine the flour, sugar, and salt. Add the chilled, diced butter and pulse until the mixture resembles coarse crumbs.
  2. In a small bowl, whisk together the egg yolk and ice water. Add this mixture to the food processor and pulse until the dough comes together.
  3. Turn the dough out onto a floured surface and knead it briefly until smooth. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
