Ingredients of Banana Banoffee Square

For the pastry

  • 2 sheets of ready-rolled puff pastry
  • 1 egg, beaten, for glazing

  • 3 ripe bananas, sliced
  • 300ml double cream
  • 170g icing sugar
  • 120g light brown sugar
  • 50g soft butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon vanilla bean paste

For the topping

  • 100g milk chocolate, melted
  • 100g double cream
  • 2 tablespoons caramel sauce
  • Fresh banana slices, to decorate

Instructions

  1. Preheat the oven to 220°C (fan 200°C, gas 7). Line a 20cm square tin with baking paper.
  2. Prick each sheet of puff pastry with a fork all over. Place one sheet on a lined baking tray and bake for 8-9 minutes, or until golden brown. Flip the pastry sheet over and bake for another 3-4 minutes, or until crisp. Repeat with the other sheet of pastry.
  3. Once the pastry is cool, cut each sheet to fit the baking tin.
  4. To make the filling, whisk together the double cream, icing sugar, light brown sugar, butter, vanilla extract, and vanilla bean paste until smooth.
  5. Spread half of the filling over the base of the tin. Top with the sliced bananas.
  6. Spoon the remaining filling over the bananas. Smooth the top and place the other sheet of pastry on top.
  7. Press down gently and place in the fridge for at least 2 hours, or overnight.
  8. To make the topping, melt the milk chocolate with the double cream in a microwave-safe bowl, stirring until smooth.
  9. Pour the chocolate sauce over the top of the pie, spreading it evenly. Drizzle with caramel sauce and decorate with fresh banana slices.
  10. Cut into squares and serve.

Tips

  • For a richer flavor, use dark chocolate for the topping.
  • If you don’t have vanilla bean paste, you can use 1 teaspoon of vanilla extract instead.
