Instructions
- Preheat the oven to 220°C (fan 200°C, gas 7). Line a 20cm square tin with baking paper.
- Prick each sheet of puff pastry with a fork all over. Place one sheet on a lined baking tray and bake for 8-9 minutes, or until golden brown. Flip the pastry sheet over and bake for another 3-4 minutes, or until crisp. Repeat with the other sheet of pastry.
- Once the pastry is cool, cut each sheet to fit the baking tin.
- To make the filling, whisk together the double cream, icing sugar, light brown sugar, butter, vanilla extract, and vanilla bean paste until smooth.
- Spread half of the filling over the base of the tin. Top with the sliced bananas.
- Spoon the remaining filling over the bananas. Smooth the top and place the other sheet of pastry on top.
