Ingredients for Almond Joy Banana Bread Recipe

  • 3 large ripe bananas (about 1 ½ cups mashed)
  • 2 cups blanched almond flour
  • 3 large eggs
  • ⅓ cup pure maple syrup
  • ½ teaspoon fine sea salt
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 tablespoon olive oil (or coconut oil)

Instructions to make Almond Joy Banana Bread Recipe

·         Preheat your oven to 350°F (175°C).

·         Start by mashing 3 large bananas. They should have lots of spots on their skin to ensure they are ripe. I find it easiest to mash the bananas with a fork on a flat surface, like a plate. You should end up with about 1 ½ cups of mashed banana.

·         Transfer the mashed bananas to a large mixing bowl. Add in the blanched almond flour, eggs, maple syrup, sea salt, baking powder, cinnamon, and olive oil. Mix until the batter looks smooth.

·         Tip: Be sure to use blanched almond flour, not almond meal, to avoid a dense and mushy bread.

·         Lightly spray a 9×5-inch loaf pan with oil. Press a piece of parchment paper into the bottom and along the sides of the pan. The oil will hold the paper in place, preventing it from moving as you pour the batter.

·         Pour the banana bread batter into the prepared loaf pan. Smooth the top with a spatula. Bake at 350°F for 50 to 55 minutes, or until the top is golden and starts to crack in the center.

·         Let the banana bread cool completely in the pan before slicing. This bread is very moist, so it’s best to store it tightly covered in the fridge for up to 5 days.

·         If you have leftovers, you can freeze individual slices. Place a piece of parchment paper between each slice and store them in an airtight container in the freezer for up to 3 months. When you’re ready to enjoy, thaw the slices in the fridge overnight.
